It's hot. We're in heat advisories all this week in Texas, with our heat indexes supposed to be up to around 110 later this week. (And people wonder why I love winter.) But I hate cooking when it's hot out because then you're entire house is hot. So here's a quick and easy recipe where you're only cooking for maybe 15 minutes. And it's super delicious. Enjoy!



Recipe:
1 serving spaghetti or rice noodles
2 tbsp olive oil/garlic (or 1 tbsp of each)
2 cloves minced garlic
Ground pepper to taste
1/4 cup Parmesan Romano grated cheese
Pasta water

Cook time: 15 minutes
Cook pasta to directions on box in salted water.
When pasta is done, drain. Melt/heat olive oil/butter in small skillet. Once warmed, put in garlic and ground pepper and cook until garlic is fragrant, being careful not to overcook. Toss pasta in skillet. Add in cheese and pasta water to coat pasta. Voila!

So there are three big things annoying about being single:
1. Shower curtains are damn near impossible to put up by yourself.
2. Opening jars. Even with a jar helper.
3. Every recipe out there is for 4-6 people! Where are the recipes for those of us who are just cooking for one person?!

Right here!

I'm going to try to blog/vlog once a week with what I'm cooking with smaller portions, intended for people cooking for just themselves. Even those fancy meal plans that send food to your home are for at least 2 people.

Without further ado, here's my first vlog! One of my favorite comfort foods is my mom's pork chop casserole. The first time I tried to make this away from home, when I was really homesick, was in Kentucky. Let's just say it was a true disaster because my mom's instructions over the phone (lord forbid she WRITE DOWN HER RECIPES) left a few things out. Like mixing in a little water to make the cream of mushroom soup more of a gravy. Or the thing with the beefy onion soup mix. So this has taken at least 5-6 times of her walking me through making it on the phone, with her calling out, "oh yeah, do this too!" before I finally got the whole recipe.



Recipe:
1 pork chop
2 medium sized potatoes, skinned and cubed
1 can Cream of Mushroom soup
1 tbsp. beefy onion soup mix
Vegetable oil

Prep time: 10 minutes. Cook time: 55 minutes
Heat oven to 350 degrees.
Lightly brown pork chops in Corningware (or similar dish that can transition from stovetop to oven) on each side.
Set aside pork chops and remove dish from heat.
Pour cream of mushroom soup into dish. Fill with one canfull of water and whisk together. (Add all-purpose flour as needed to thicken.) Add beefy onion soup and whisk together.
Place pork chops and potatoes in dish. Cover with lid and cook for 35-45 minutes, or until potatoes are able to be pierced with a fork.
