Solo Sustenance, Ep 2: Cacio e pepe
Jul. 25th, 2017 09:57 pmIt's hot. We're in heat advisories all this week in Texas, with our heat indexes supposed to be up to around 110 later this week. (And people wonder why I love winter.) But I hate cooking when it's hot out because then you're entire house is hot. So here's a quick and easy recipe where you're only cooking for maybe 15 minutes. And it's super delicious. Enjoy!
Recipe:
1 serving spaghetti or rice noodles
2 tbsp olive oil/garlic (or 1 tbsp of each)
2 cloves minced garlic
Ground pepper to taste
1/4 cup Parmesan Romano grated cheese
Pasta water
Cook time: 15 minutes
Cook pasta to directions on box in salted water.
When pasta is done, drain. Melt/heat olive oil/butter in small skillet. Once warmed, put in garlic and ground pepper and cook until garlic is fragrant, being careful not to overcook. Toss pasta in skillet. Add in cheese and pasta water to coat pasta. Voila!
